Cheddars
Keen's Cheddar
Superior hand-made farmhouse cheddar from the Keen's farm in Somerset, England. Hand picked and aged by our friends at Neal's Yard Dairy in London. Widely considered among the best in farmhouse cheddars. Tremendous world-class flavor! Made with unpasteurized milk from their herd of Fresian cows in the heart of Somerset.
Entice yourself with the classic, tangy, smooth cheddar from Keen's farm! (see also detailed farmhouse cheddar description) Great anywhere, anytime! Good for any melting application where intense sharpness is not desired. Traditionally melted over apple pie in England, also superb when paired with fruit tarts and cobblers. Makes cheeseburgers heavenly!
Montgomery's Cheddar
Another farmhouse cheddar and one of the finest available in the world! From the famous Montgomery farm in Somerset, England. Sourced and aged from our fine friends at Neal's Yard Dairy in London. Typically a one year aged product. The Montgomery's we are currently selling at the shop is staggeringly good! The range of flavors incorporate almost the entire spectrum of English flavors: lemon, apple, walnuts, grass, toffee, hay, boiled-eggs, heavy cream, butterscotch, tobacco, oak, leather, etc....Deeply haunting and complex! Ubriaco al Prosecco
This cheddar-like cheese is covered with grape skins used from the wine making process. This gives the Ubriaco an intense and fragrant flavor.

Semi-Hard
Cabrales
A World-Class Blue Cheese, on par with the greats! Always in foil, the D.O.P. Cabrales is powerful to the tongue but sophisticated and evolving. Flavors of Red Wine, Gooseberries, Dark Chocolate, and Black Walnuts all ride out a long finish that lingers on the palette. Don't waste this cheese on a salad! Cabrales deserves to dominate the stage!
As for wine, try Tannic Reds, or a Sweet Sherry.
Monchego
Manchego (mahn-CHAY-goe), aged 1 year, is one of Spain's most famous and ubiquitous cheeses. Manchego is a straight forward sheep cheese with an oily, slightly gritty body. It has a milky, lactic flavor with a salty and sweet sheep tang. The skin of the cheese is often rubbed with oil to add flavor and varies in color from beige to grayish-black, with an unmistakeable "herringbone" pattern around the rind. Manchego accomodates many foods and is great with raw or cured Salami's, Vegetables, or Membrillo, a Spanish Quince Paste.
As for wine, try the younger Manchego as a snack cheese with Sangria, or Cavabut save the aged version for a big, bold Rioja!
Prima Donna
Gouda lovers everywhere, your undivided attention, please! In Prima Donna, we have found the flavors and textures that characterize the heavenly aged cheeses, sourcing all the best qualities of the Goudas, Cheddars and Parmigianos that have made our meals complete. The initial bite, so full of crystals that it's almost crunchy, is bursting with spices and hazelnuts, turning around to finish with a sweet "finale."
To truly appreciate this cheese, try it "solo", allowing it to melt on your tongue and sing its acclaimed melody to your palate. A standing ovation! A perfect snack with a rich extra virgin olive oil and some fresh, crusty bread and a late season Gewurtzraminer or Riesling.
